Shredded Barbecued Beef Sandwiches
1 boneless beef chuck roast (4 pounds) 3 cups beef broth, divided 1 teaspoon salt 1/8 teaspoon pepper 2 tablespoons cooking oil 2 large onions, chopped 1 cup ketchup 2/3 cup chili sauce 1/4 cup cider vinegar 1/4 cup packed brown sugar 3 tablespoons Worcestershire sauce 2 tablespoons prepared mustard 2 tablespoons honey 2 tablespoons lemon juice 12 to 16 Kaiser rolls or hamburger buns
Place roast in a slow cooker. Add 2 cups beef broth, salt and pepper. Cover and cook on high for 5-6 hours or until beef is tender. Remove roast and shred with forks; set aside. Discard all cooking liquid. In a cooking pan sauté onions in oil for 5 to 7 minutes, set aside. Add to the slow cooker the meat, onion, ketchup, 1 cup beef broth, chili sauce, vinegar, brown sugar, Worcestershire sauce, mustard, honey and lemon juice. Mix well. Cover and cook on high for 2-3 hours. Serve on rolls.
Yield: 12 to 16 servings
